Pork ‘tigania’ (stir-fry bites) with leek

Ingredients

  • 1.5 kg pork shoulder
  • 1 onion, finely chopped
  • 2 leeks, cut into rounds
  • 2 tablespoons olive oil
  • 1 glass white wine, assyrtiko
  • salt, pepper freshly ground

Execution

  1. Wash and drain the meat. Cut the meat into small pieces.
  2. Add the meat to a medium hot frying pan and stir until it all of its liquid is soaked up. Add olive oil and onion and stir until golden.
  3. Deglaze with wine, add the leeks and a small quantity of water. Cover the pan and simmer until the leeks have thickened.
