Ingredients
- 1.5 kg pork shoulder
- 1 onion, finely chopped
- 2 leeks, cut into rounds
- 2 tablespoons olive oil
- 1 glass white wine, assyrtiko
- salt, pepper freshly ground
Execution
- Wash and drain the meat. Cut the meat into small pieces.
- Add the meat to a medium hot frying pan and stir until it all of its liquid is soaked up. Add olive oil and onion and stir until golden.
- Deglaze with wine, add the leeks and a small quantity of water. Cover the pan and simmer until the leeks have thickened.
